Yield: 1 serving

Recipe

Ingredients

  • 500g (3 ⅓ cups) bread flour (strong white flour)
  • 7g (2 tsp) instant yeast
  • 10g (1 ½ tsp) salt
  • 15g (1 tbsp) sugar
  • 30g (2 tbsp) butter or olive oil
  • 300ml warm water

Method

  1. 1. In a large bowl, combine flour, yeast, salt, and sugar. Keep salt and yeast on opposite sides at first.
  2. 2. Pour in warm water and butter/oil. Mix until a rough dough forms.
  3. 3. Turn out and knead for 8–10 minutes (or use a stand mixer 6–7 mins) until smooth and elastic.
  4. 4. Place in a lightly oiled bowl, cover, and let rise until doubled in size (about 1–1.5 hours).
  5. 5. Punch down, shape into a tight log, and place into a greased loaf tin.
  6. 6. Cover and let rise again until the dough is about 1 inch above the tin (30–45 mins).
  7. 7. Preheat oven to 220°C (425°F). Bake 25–30 minutes, until golden brown and hollow-sounding when tapped.
  8. 8. Remove from tin, cool on a wire rack before slicing.
